In our vineyards, the Tempranillo, Garnacha, Cabernet Sauvignon, Merlot and Shiraz grape varieties ripe in a clayey soil in a controlled sunshine thanks to an adequate pruning with low rainfall seldom exceeding the 400-500 ml per year.

The vines grow in shallow and low fertile soils so as to diminish the production, whereas the quality of the grapes is improved though. They are not watered at any time of the year to prevent the decrease in tannins, a basic element for an excellent ageing.

No herbicides or chemical fertilizers are used.

The pruning of the vines during winter and summer is thoroughly performed, with an extreme care. After the grape sprout and before the before the envero, some fruits are removed from the vine so as to enhance the quality of the bunches remaining in the plant.

These tasks decrease the vineyards' yield and keep the accurate amount of production in order to obtain grapes with the best alcohol volume, acidity and tannic structure needed for our subsequent wine ageing and production.
